Everyone usually recommends Mistborn as the entry point. I personally started with the Stormlight Archive (The Way of Kings).
His writing generally gets better with each book, after going from The Stormlight Archive (all the way up to Rhythms of War) and then going over to Mistborn, I noticed a bit of a difference in his writing.
If I were to start all over again, I would go with Mistborn. I thought this flow chart someone made on Reddit to be pretty good.
